Balsamic Vinegar of Modena PGI Dodi Family - Intense and Delicate


Product obtained by acetification of cooked must with wine vinegar and an aliquot of wine vinegar aged for at least 10 years. The subsequent maturation and refinement processes take place through the passage of the product in barrels and small barrels of precious woods of different sizes and essences, carefully selected from all those present in the company.
Through these periodic passages between the various barrels and small barrels, the sought-after organoleptic characteristics and a typical bouquet and perfume acquired by the product through the different wood essences are achieved.
Produced in the province of Modena and Reggio Emilia through the use of musts obtained from Trebbiano, Lambrusco, Sangiovese, Albana, Ancellotta, Fortana and Montuni grapes.

Characteristics
Color: dark brown, shiny load.
Nose: persistent, intense and delicate, with woody notes.
Viscosity: consistent.
Taste: bittersweet with enhancement of the soft parts, structured, harmonious.
Density at 20 ° C: not less than 1.330.
Acidity: 6%.

Ingrediants
Cooked grape must, wine vinegar.
Contains sulphites .
Use of musts obtained exclusively from grapes grown in Italy.

How to use
Ideal when used raw as a condiment for boiled meats and sauces.
It goes delicately with fish and meats and cheeses (excellent on Parmesan-Reggiano flakes).
Unique complement for fruit salads, ice creams, creams and zabaioni.
We strongly advise against its use during the cooking phases.

Store at room temperature.
It does not undergo organoleptic alterations even after opening the bottle.
