Millet, like oats, belongs to the grass family and is native to eastern India.
It is one of the oldest cultivated plants and, in Europe, its cultivation dates back to the pre-Christian era. Up to 100 years ago, millet played a particularly important role in nutrition, but it has gradually fallen into oblivion.
Only recently have its valuable qualities been re-evaluated, making it the richest cereal in minerals present on the entire planet .

It is a gluten-free food and, therefore, insoluble proteins such as glutenin and gliadin. Millet contains Silicic Acid, Fluorine, Sulfur, Phosphorus, Iron, Magnesium, Potassium, Zinc etc.
It also contains a high quantity of B vitamins (B1, B2, B6, B17), pantothenic acid and nicotinic acid amide.

Recommendations for use:

It is possible to add ground millet to muesli, to drinks such as freshly squeezed fruit and vegetable juices, to yoghurt or soups.
An original idea for a light appetizer, to complete breakfast or for a small snack and mix two teaspoons of wholemeal millet flour with a grated apple.
