Curiosity

Coprinus (Coprinus comatus), also called Sasakure Hityotake, is a very common saprophytic fungus around the globe.

It grows in the northern temperate zones, isolated or in dense groups, in the rainy seasons, from spring to autumn, preferring soils rich in decaying organic substances. It appears during the night and reaches full maturity in a few hours.

Particularly appreciated in the kitchen, Coprinus comatus is known by the name of Chiomato Coprino due to the fringes, similar to hair, that cover it, or even Porcelain mushroom. At the end of the ripening phase, the white mushroom turns black: in the past a very resistant coloring liquid was obtained from its cap, hence the further name of Ink mushroom.

The interest in the use of mushrooms is linked to the presence of high molecular weight polysaccharides, in particular β (1,3-1,6) -D-glucans.
