DULCITA Wholemeal Cane Sugar AltroMercato BIO 100% Unrefined

Integral sugar, rich in mineral salts by nature, unrefined and from a fair trade market.

100% unrefined sugar cane extract (sacchararum officinarum), coming from Ecuador (where it is called Panela granulada), processed in an artisanal and simple way, the canes are simply mechanically squeezed and the juice is concentrated by evaporation of the water , using sun-dried cane residues (bagasse) as fuel. In this way Dulcita retains all the nutritional principles that are normally lost in the refining of white sugar, it is therefore rich in mineral salts , in particular iron .

It is not chemically bleached and the natural presence of molasses gives it its characteristic amber color and non-crystalline appearance.

When tasted, Dulcita has a sweet, honeyed flavor and an amber yellow color.

It is ideal for cakes, biscuits, jams, cocktails and creamy preparations. It is excellent in drinks, infusions and teas.

Production chain

Dulcita is entirely produced and packaged in Ecuador by the growers of Copropap and Palo Quemado, cooperatives that bring together small producers from the provinces of Pichincha and Cotopaxi, who harvest and process the sugar canes by hand. Exported via MCCH

The control on compliance with organic legislation is carried out by IMC.

Processing

The cultivation of sugar cane requires a lot of manpower.
The cutter separates the stem from the leaves and the end with the machete.
After squeezing the juice is filtered and heated, then cooled to allow solidification.
The cooperative produces around 130-150 quintals per week.
The production yield is 1 ton of brown sugar from 12 tons of sugar cane.
