Timilia® Whole Wheat Semolina Bio Terre E Tradizioni - Ancient Sicilian Grains

Timilìa is one of the names of an ancient Sicilian wheat, produced from organic farming: high in fiber , it contains many trace elements of wheat germ and bran, and with a low gluten index.

Ideal for the preparation of bread, pasta, desserts and pizza, the flour is obtained by stone grinding, preserving the nutritional elements of the grain to the maximum.

The ancient grains of Terre and Tradizioni

Timilìa is a variety of durum wheat in danger of extinction, typical of the central Sicilian territory
Together with Russello and Maiorca, it represents biodiversity in the Sicilian-Mediterranean cereal panorama and is the result of millenary natural selections.

Low gluten index.

Timilìa has a gluten index (a measure of the structural strength of gluten) of less than 15%, which differentiates it from modern grains that have indices greater than 90%. Some studies carried out on ancient grains show a lower allergenicity, compared to modern grains, such as to make them compatible for consumption for those suffering from gluten intolerances, other than celiac disease.
