From the best crops of Southern Italy, a superior category olive oil obtained by cold extraction with a purely mechanical procedure.

Extraction with centrifuge is the modern method, the machines are all in stainless steel, to separate the olive paste from the oil as a result of centrifugation. The result is an oil with a more delicate taste that maintains its unmistakable sweet flavor over the course of the year.

Typical acidity about 0,6% (maximum EEC regulation: 0,8%).
