Millet (Panicum miliaceum) is a cereal originally from India, but cultivated in various subtropical regions since prehistoric times. It still has great importance in the nutrition of some African and Asian countries, although it has been supplanted by maize and rice. Today it rediscovers new light thanks to its natural absence of gluten.
