GUAR FLOUR: Food thickener-Guar is an annual plant native to India, belonging to the Leguminosae family, of modest size and characterized by the presence of small pods containing from 5 to 9 pink, light gray, white and black seeds from whose ground endosperm you get a whitish or slightly yellowish powder known as Guar gum or flour.

From a chemical point of view, this flour is very similar to that obtained from carob seeds, consisting of high molecular weight polysaccharides, formed by galactans and mannans joined together by glucosidic bonds and known as Galactomannans. The aforementioned macromolecules make up over 70% of the components present in this gum, flanked only minimally by proteins, fibers and trace fats, and give the product particular properties that are particularly useful both from a culinary and dietotherapeutic point of view. aqueous environment, guar gum hydrates rapidly, offering a very high viscosity and particularly resistant to mechanical stress, almost doubling its volume without any alteration from a chemical point of view.

Thanks above all to this important property, guar flour is used by the food industry as a thickener, stabilizer, emulsifier and structuring agent and its presence is easily recognizable on the label thanks to the initials E412.
