Spirulina maxima Geitler (Arthrospira maxima Setchell & Gardner) belongs to the Pseudanabaenaceae family. Spirulina is a blue-green filamentous microalgae; it is characterized by the typical spiral shape (visible only through the microscope), for which it got this name. It grows in the lakes of America and Africa. The pre-Columbian civilizations used it as a source of sustenance, and in particular the Aztecs, who took it from Lake Texcoco in central Mexico. It is reported as a "green food" together with wheat, barley and chlorella, or as a complete unprocessed food. Spirulina has a high nutritional property, a characteristic that reflects its particular composition, it contains: proteins (71%) containing all the essential amino acids, vitamins (vitamin A, vit. E, vit. C, vit. B1, vit. B2, vitamin B6, vitamin B12, inositol, vitamin H, pantothenic acid, folic acid), minerals (iron, phosphorus, calcium, manganese, magnesium, zinc and potassium), carbohydrates, omega 3 and omega 6. Spirulina has a high protein content; it is rich in 18 amino acids, especially in the “mixture of trivalent amino acids” (leucine, isoleucine and valine), which is very popular with athletes. Spirulina, unlike other algae, is free of iodine.
