Hericium is a rare mushroom considered a delicacy even if a little tough, it preferably develops on live oak trees or beech, walnut, plane tree and other broad-leaved trees. It is a parasitic fungus, the fruiting body resembles the body of a monkey so in Asia it is called the Monkey's head. Contains potassium, zinc, iron, germanium, selenium and phosphorus. Rich in essential amino acids and contains ß-glucans and various polysaccharides. Historically used in traditional Chinese medicine (TCM) to improve digestion and food intolerances.
