The chickpeas of the Biodynamic Organic Farm Il Cerreto are grown in Tuscany from self-produced seeds : in our lands in Val di Cecina, in particular, we grow a variety of small and round chickpea, with a smooth appearance.

Organic chickpeas guarantee a good supply of vegetable proteins, which is why they are very appreciated by those who follow a vegetarian or vegan diet, but their taste and their versatility actually conquer everyone.

Perfect both stewed with a little quality extra virgin olive oil or as a soup, perhaps in combination with cereals such as organic spelled.

Because they are good

The cultivation of organic and biodynamic chickpeas takes place without the use of any chemical substance but following the principles of an agriculture that respects the times of nature and that preserves the health of the entire ecosystem. The result is therefore superior quality foods, which retain all the nutritional properties at the origin.

Like other organic legumes, chickpeas are gluten-free, but undoubtedly rich in important elements such as vitamins and mineral salts, especially potassium, phosphorus and magnesium. Thanks to the presence of iron, they can be of help to those suffering from anemia, but they are also good for the heart and help to lower cholesterol, triglycerides and high blood pressure. Among the benefits of biodynamic organic chickpeas there is also the presence of fibers, essential for maintaining regular intestinal transit and getting rid of substances harmful to the body as soon as possible.

How To Cook Biodynamic Organic Chickpeas

The history of this legume goes back thousands of years: it comes from afar, from the East, but it has conquered all peoples, including “our” Romans. For a long time it was a food considered poor, consumed by slaves and workers, but fortunately, as happened with many other products of the earth, today it is appreciated for its many properties. A curiosity that not everyone knows, perhaps, is the appearance of the pod, which contains exactly two chickpeas.

Often when they are dry, cooking biodynamic organic chickpeas is worrying, due to soaking. In reality, just immerse them in water the night before, go to sleep peacefully and find them ready to prepare once you wake up. How to cook organic chickpeas? The recipes are almost endless: I boiled, with a drizzle of extra virgin olive oil; as a base for hummus, that greedy sauce perfect for appetizers, but also for more original preparations such as falafel, meatballs that even the little ones of the house love. Legumes and cereals are the perfect match, which is why biodynamic organic chickpeas lend themselves to the preparation of soups, perhaps in combination with lentils, spelled and barley. From this legume we also get the organic chickpea flour, the basis of our chickpea cake, an alternative "pizza" very present in snacks for children (and not).
