Carnosine is a dipeptide composed of alanine and histidine, the discovery of which in muscle dates back more than a century ago, while the definition of its chemical structure can be traced back to the early 1920s.

Carnosine is found in significant quantities in muscle tissue, where it regulates certain metabolic processes related to energy production, in the brain, heart muscle and stomach.
