This official certification ensures that all ingredients used in the production of Gragnano pasta are guaranteed to be forming a legally defined area emitting the Gulf of Naples. The pasta must be made by mixing durum wheat with water from local aquifers in Monti Lattari. The pasta must therefore be in die-cast extruded bronze and Slow dried in the mountain air.
