This variety of Quinoa is native to the Uyuni saline area, more than 4000 meters high. Quinoa is a natural source of protein, high in iron. It does not contain gluten and is therefore considered easy to digest. Thanks to these characteristics, Quinoa has been studied as a possible alternative food to add to the diet of NASA astronauts, in long-duration space flights.
