Lentinula edodes is the first medicinal macrofungus to be used with modern biotechnologies; it is the second most popular and sought after edible mushroom in the global market, which is attributed not only an excellent nutritional value but also a therapeutic potential. It is the source of several well-researched preparations with proven pharmacological properties, most notably the Lentinan polysaccharide and erythadenine.

The Shiitake fermentation process aims to enhance the polysaccharide component of the mushroom, in particular that of Lentinan beta-glucan (the main bioactive compound of the mushroom). Fermentation is characterized by a series of chemical processes of partial demolition of organic substances, with the production of simpler compounds or specific derivatives. This occurs through the use of enzymes or specialized microorganisms that derive energy from the fermentation process for their development and proliferation. The pharmaceutical industry uses fermentation processes mainly for the production of antibiotics (penicillins, semi-synthetic antibiotics).

The particular fermentation process of the Shiitake contained in the Lentinex allows to obtain a Novel Food in liquid phase with a high content of Lentinan which retains the triple helix configuration, a molecular weight higher than 104 Dalton and a high solubility. These three characteristics are essential for the administered product to be absorbable by our body; furthermore, the liquid phase formulation allows oral administration via the sublingual route, a very rapid and therefore much more powerful form of intake.
