Nutritional values

The generic term for vitamin B6 includes three compounds, pyridoxine , pyridoxal and pyridoxamine . All three can be transformed through enzymatic processes into pyridoxal phosphate , the biologically active form of this vitamin.

B6 (pyridoxine) is a vitamin that participates in the reactions of over 60 enzyme systems.

Its presence is required in particular in the synthesis and degradation reactions of amino acids and proteins , in the synthesis of hemoglobin and some biogenic amines (serotonin, histamine, dopamine, acetylcholine, GABA), compounds involved in the activity of the nervous system .

Deficient forms of vitamin B6 can be induced by prolonged use of some drugs, especially oral contraceptives. Deficits of this important nutrient are also observed in some depressive pictures .

Furthermore, through its action on various minerals and neurotransmitters, it has a regulatory action on the nervous system .

Natural sources with higher concentrations of pyridoxine are meat (liver and kidney), egg white, milk, cereals and green leafy vegetables. It should be borne in mind that heat, freezing and frying significantly compromise the vitamin content of a food.
