Tuscan nature Florentine chickpea
The "Florentine chickpea" is a rustic variety of chickpeas with a wrinkled and thin skin. In cultivation, a cycle of annual rotations is followed to maintain the right balance in the soil. It requires at least 10 hours of soaking and cooks without salt for 1 ½ hours on a low heat. During cooking it releases characteristic aromas forgotten over time. Excellent as a side dish or mashed for soups and sauces. Cultivated in Tuscany
