Cocoa is native to Central America, the Aztecs were among the first populations to use it, to discover its unique properties and present them to the world. Christopher Columbus knew cocoa during his travels in America, but it was the conquistador Hernàn Cortés, right at the court of Montezuma, who treasured it and brought it to the Old Continent. The cocoa tree (Theobroma cacao) is an evergreen with elongated fruits that turn reddish when ripe, and contain up to forty cocoa beans. The cocoa beans were considered a gift from Quetzalcoatl, the god of wisdom, which legends report, descended to Earth on the rays of a star, taking with him a cocoa tree stolen from the garden of paradise. According to the Toltecs, another population of Central America, the star of the legends was actually the planet Venus.
