Pleurotus (Pleurotus ostreatus), also called hiratake, is a genus of mushroom that is widely cultivated and consumed around the world.
Pleurotus is a widespread fungus in Asia, Europe, South America and Africa. In the Sung Dynasty (420-479 BC) it was called the Celestial Flower Mushroom. Characterized by an oyster-shaped hat up to 20 cm in diameter and with a short stem, it is also called Oyster mushroom while in China it is known as Ping Gu, or flat mushroom.
It is a very common mushroom given the simplicity of its cultivation process, both in the home and in the industrial environment, and is particularly appreciated in the kitchen.
Known as the oyster mushroom, pleurotus boasts remarkable properties thanks to the content of polysaccharides (β-1,3-1,6-glucans), numerous vitamins (in particular ergosterol), minerals, fibers and proteins . A natural statin, lovastatin, has also been found.
The interest in the use of mushrooms is linked to the presence of high molecular weight polysaccharides, in particular β (1,3-1,6) -D-glucans.
