Lecithin is a substance rich in fatty acids and phosphorus. The importance of this substance lies in the fact that it is fundamental for the structure of the cells of the human body, being above all part of the cellular and subcellular membrane on which most of the metabolic reactions depend (just think of nerve conduction, energy synthesis, etc).

Regarding the importance of lecithin for the nervous system, apart from its consistent supply of minerals such as phosphorus, it provides choline for the synthesis of acetylcholine, a substance that serves to carry messages from one nerve cell to another and which progressively reduces in the elderly, ”numerous and serious clinical studies have confirmed the hypothesis that the administration of choline, it is possible to obtain an increase in the synthesis of acetylcholine in the brain.

Due to its emulsifying action it is important for the absorption of fat-soluble vitamins (A, D, E, F, K). Phospholipids, present in lecithin, are important for energy production by intervening in oxidative phosphorylation for the production of ATP. Among the lecithins, the most valuable is the one extracted from soy, due to its high content in phosphatidylcholine. The increasingly refined and unbalanced diet is no longer able to supply essential constituents such as phospholipids in adequate quantities.
