Obtained with the most recent method that uses purified enzymes to convert the starch of the cereal into simpler sugars. With this method, a malt richer in simple sugars than traditional malts is obtained and it is possible to produce malts composed of a single grain, as there is no need to add barley.

Rice syrup is made by adding purified enzymes to cooked rice. The enzymes break down the starch molecules in the cereal into sweet maltose. From the following cooking and filtration a thick and very sweet syrup is obtained.
