What makes Ulmo Honey so special?
VERY HIGH PURITY
Thanks to the numerous scientific studies carried out by the Pontifical University of Chile, it has been possible to verify the purity of Ulmo Honey, as this can also vary significantly depending on the position of the hives and the extraction process. The results show that 90% of the nectar collected by our bees comes from the Ulmo flower: it is therefore almost pure Ulmo Honey.

CRYSTALLIZATION OF HONEY
ULMO honey is collected in Chile in the period January / April (season where it is warmer in that hemisphere) and placed in pots in Italy with only the filtration and deaeration processes (to remove any impurities and the air): it does not undergo treatments thermal in order not to compromise its health characteristics. For honeys loaded with glucose and poor in water (such as Ulmo Honey), crystallization can take place after 2-3 months, also coinciding with the lowering of temperatures.

ULMO honey, a tree typical of some areas of Chile, has been compared with other types of honeys, which also boast antibacterial properties, and an artificial honey produced for the purpose in the laboratory. ULMO honey came out as a winner across the board, proving to be the most effective spectrometric investigation of competitors against five selected strains of methicillin-resistant Staphylococcus aureus (MRSA), Escherichia coli and Pseudomonas aeruginosa.

The Ulmo tree
(Eucryphia Cordifolia) is native to Chile. It is a large evergreen shrub that can grow to form a tree capable of reaching 6 to 30 meters in height. It is part of the temperate rainforests that grow in Valdivia in the Chilean Lakes Region as far south as Chiloe.
Ulmus is filled with large white, camellia-like flowers that bloom from late January through March (the second half of the Chilean summer). When the Ulmo is in bloom, the mountains and hills it thrives on are covered with a thick white cloud. The nectar collected by the bees quickly turns into a delicious creamy honey with a buttery and colorful texture, with an incredibly delicate scent.
The taste and aroma evoke a subtle combination of anise, jasmine, vanilla and cloves, with a touch of tea and caramel. It is not surprising that Ulmo Honey is one of the finest and most sought after in Chile.
At the 2007 Winter Fancy Food Show in San Francisco, Miele di Ulmo was awarded the Best Honey of the show. This honey also gained universal acclaim at the National Honey Show in Addlestone, England in October 2009.
