Active principles

• Amylase: group of enzymes that degrade the molecules of polysaccharides formed by starch and glycogen. They are divided into alpha-amylase and beta-amylase.
• Proteases: also called peptidases, they are enzymes involved in protein digestion.
• Lipase: enzymes responsible for the hydrolysis of triglycerides into glycerol and fatty acids. Taken with meals or shortly before, lipases promote the reduction of fat deposits and cholesterol.
• Cellulase: family of enzymes, mainly produced by fungi, bacteria and protozoa that catalyze the hydrolysis of 1,4-beta-D-glycosidic bonds in cellulose and of beta-D-glucans in cereals. However, forms of cellulase are also present in animal and plant organisms, often different in structure and mechanism of action. According to the type of catalyzed reaction, five classes are distinguished and their sequential action leads to the degradation of plant fibers into simple glucose subunits.
• Lactase: also called beta-galactosidase and secreted by the mucous membrane of the small intestine, it is responsible for the hydrolysis of lactose into the two monosaccharides that constitute it, galactose and glucose. It is particularly active at birth, but immediately after weaning it undergoes a marked functional decline. This phenomenon is responsible for the so-called lactose intolerance: in the presence of a low lactase activity, which characterizes adult individuals to varying degrees, the ingestion of this sugar causes a symptomatic procession characterized by swelling, abdominal cramps, meteorism, flatulence, diarrhea, fatigue and weight loss.
